There's no better time to enjoy British strawberries than on a hot summer's day. They are so sweet and juicy; delicious on their own but I also love using seasonal berries in desserts, like this easy peasy summer parfait. Just layers of strawberry and Pimm's cream, fresh strawberries and crumbled biscuits for a bit of texture. It's super simple to put together but tastes properly luscious!
Summer Strawberry Parfait
Strawberry and Pimm's Chantilly Cream
100 g whipping cream
10 g icing sugar
8 ml Pimm's No. 1
2 tbsps freeze-dried strawberry powder
2 Digestive biscuits, crushed and crumbled for texture
6 strawberries, quartered
2 strawberries, halved
2 tbsps Callebaut white chocolate Crispearls (optional)
Measure all ingredients for the chantilly cream into a mixing bowl and whisk to soft peaks.
Spoon two tablespoon full of cream into each individual serving glass. Layer with biscuits followed by strawberries. Repeat with remaining cream, biscuits and finish with the strawberry halves and Crispearls (if using).
Chill for an hour before serving.
This recipe makes 2 servings but can easily be scaled upwards for more portions.
